In case I haven’t mentioned it enough, breakfast is one of my favourite meals of the day. Whether I’m chowing down on hash and eggs, baked oatmeal or French toast, the first meal of the day is one of the best.
I particularly love savoury breakfasts at the weekend, when we have more time to cook, but one dish I rarely make at home is Eggs Benedict. I don’t know why, because it’s one of the first things I order off brunch menus when I eat out. I guess I’m always scared off by how fiddly it can be to make your own Hollandaise sauce, especially first thing in the morning if your tummy’s rumbling and you just want to eat.
Having found the following collection of delicious Eggs Benedict recipes and how simple and tasty they look, I’m seriously thinking about trying to work this brunch dish into my monthly rotation. What do you think? Do you make Eggs Benedict often? Or ever?

Arugula and Prosciutto Eggs Benedict (via Foodie Crush): This recipe calls for a hollandaise sauce made in the blender, which makes things so much simpler and has a Mediterranean twist with the Proscuitto and tomatoes.
Eggs Benedict with Bacon Avodaise and Harissa (via Closet Cooking): Again with the delicious avocado. This time turned into its own creamy Hollandaise and combined with crispy bacon and harissa spread.
Eggs Benedict Burger (via Confections of a Foodie Bride): If you thought Eggs Benedict was just for breakfast, you thought wrong. This burger is served on an English muffin and topped with bacon, poached egg and Hollandaise sauce.
