I adore pizza. So much so that I could quite happily eat it every day and not complain. In fact. there were times while we were travelling when we were *forced* (cough cough) to eat pizza several times in a row. You know, out of necessity.
Anyhoo, I’m always on the lookout for a good pizza recipe, but I understand that eating mountains of mozzerella probably isn’t good for me. So I’m always sure to save any skinny pizza recipes I see around the web. Here’s some of my most recent favourites.
Skinny Avocado Pizza (via Little Broken): This is basically deconstructed guacamole on a pesto pizza. And therefore basically a dream come true for little old me.
Thinnest Crust Pizza with Ricotta and Mushrooms (via Lauren Conrad): I’m not normally a mushroom-on-pizza fan, but this looks so darn pretty I’d make an exception.
{Gluten-Free} Skinny Buffalo Chicken Spaghetti Squash Pizza (via Shared Appetite): I’ve heard of cauliflower pizza, but spaghetti squash? Amazing. And when it’s topped with buffalo anything, I’m sold.
Light BBQ Chicken Pizza (via Pinch of Yum): You’d never know this crust was cauliflower; it looks so crispy and dough-like!
Nectarine and Ricotta Pizza with Fresh Basil (via Alexandra Cooks): This recipe calls for homemade ricotta, which looks surprisingly simple to make yourself.
Spinach Artichoke Whole Wheat Pizza (via Novice Housewife): Like a low fat version of your favourite dip, this vegetarian pizza looks like it would taste just as sinfully delicious.
Lemon Arugula Pizza (via Two Peas and Their Pod): This would be one for Scott, as he adores arugula. It just looks so fresh and healthy.
Market Mediterranean Pizza (via Tartine and Apron Strings): This is gluten free, grain free, lactose free, veggie and paleo. Phew. This looks like a veggie flatbread made in healthy heaven.
Cauliflower Pizza Crust – Margherita Pizza (via Cooking Classy): Doesn’t this just look like the prettiest pizza you’ve ever seen? Perfect for those who need gluten free. Or even those who don’t.
Healthy Chicken Tamale Pizza (via 24 Carrot Life): Made with a cornmeal crust, this is like a Tex Mex dream come true. Except this recipe uses boiled chicken and only a little cheese. Mind blown.

I can’t wait to try these pizza recipes! I’m a huge fan of just plain cheese pizza, but lately I’ve been craving something with a little more complexity. The cauliflower pizza crust-magherita pizza sounds like exactly what I’m looking for. It seems like I could use the cauliflower crust recipe for a few of these other recipes if I really like it.
