One thing I love about our daily routine is breakfast. Especially those lazy breakfasts that we treat ourselves to at the weekends.We put on a little music, make our coffee and our food and then sit down and enjoy the morning. And maybe go back for a second helping of coffee.
We talk about what we’ve got planned for the day or gossip about things that happened the day before and just relax knowing that we’ve got the whole day ahead of us (well, most of it, once we’ve dragged ourselves out of bed and made a feast).
But for me, the eternal dilemma is always: what to make? Especially for mornings when we’re short on time. Now let me say, I will NEVER miss a breakfast. Ever. Since I was a child, I was taught that it was the most important meal of the day and it was just something that we did, every day. Routine soon becomes habit.
Plus, and I hate to admit it, but just like with any meal of the day, I get “hangry” if I don’t eat.
Therefore, on days when I’m short on time, just skipping breakfast isn’t an option. Of course, I’ve gone down the old peanut butter and toast route, but I like to change things up. Which was why I came up with these easy breakfast parfaits made with ingredients that were already in our cupboards.
I love the breakfast parfaits you can buy at places like Starbucks, but they’re always so overpriced and sometimes crammed with ingredients you don’t like. With these, you could switch up certain ingredients to make them just how you want them.
Don’t like natural yogurt? Switch it up with vanilla. Or fromage frais. Don’t like banana? Top it with berries or mango. Don’t have Belvita biscuits? Use graham cracker or digestive biscuits. You can even make these the night before and leave them in the fridge.
Easy, tasty and healthy. Just what I like from my non-lazy breakfasts.
Easy Breakfast Parfaits

1 pack Belvita (4 biscuits) – can substitute digestive biscuits, or 6 Graham Crackers
250g (1 cup) plain yogurt
1 banana
Honey (optional, for drizzling)
Directions
- Crush the Belvita in a sandwich bag using a rolling pin, until crumbs are formed. Pack the crumbs into two small bowls or glass dishes.
- Spoon the yogurt over the crushed biscuits, dividing equally between each glass.
- Top with sliced banana and drizzle with a little honey.
Notes
- These parfaits can be made the evening before and kept in the fridge until eating. If doing this, follow every step apart from the last and then slice the banana on top right before eating.
