Have you ever used pudding mix in a cookie recipe? I haven’t, but I see so many delicious recipes that use it. Having used cake mix in my gooey butter cookies, I can see the benefit and convenience of using a ready-made mix as a base for baking,especially as pudding gives cookies a nice soft and gooey texture.

Funfetti Cheesecake Pudding Cookies (via The Recipe Critic): Putting the “fun” in funfetti, these cookies are made with cheesecake pudding mix and studded with white chocolate chips and rainbow sprinkles.
Samoa Pudding Cookies (via Chef In Training): I’ve still yet to taste the legend that is samoa Girl Scout cookies (I know, criminal), but I might just have to bypass those and make these instead. They’re topped with caramel buttercream and toasted coconut. OMG.
Rocky Road Nutella Pudding Cookies (via Crazy For Crust): Combining everything that’s awesome about rocky road (nuts, marshmallows, chocolate, these yummy cookies are also packed with Nutella. Doesn’t get much better than that.
Pistachio Pudding Cookies (via The Kitchen Magpie): These pretty green cookies use pistachio instant pudding mix, white chocolate chips (Definitely getting some love today – as they should) and crushed pistachios. Perfect for St. Paddy’s Day!

Quadruple Chocolate Soft Fudgy Pudding Cookies (via Averie Cooks): Ok, did I just talk about triple chocolate cookies? Pfft, that was so a minute ago. These are quadruple chocolate cookies. Anything you can do, Averie Sunshine can do it better. Or just put more chocolate in it. Whatever, they look fantastic.
Cranberry White Chocolate Pudding Cookies (via The Baker Upstairs): Cranberry and white chocolate are so underrated as a combination, but work so well together. These soft pudding cookies have a great texture and use white chocolate pudding mix for a little extra white chocolate flavour (which I’m totally ok with, if you haven’t already realised)
Andes Triple Chocolate Mint Pudding Cookies (via Mom On Timeout): Again, with the triple chocolate. Again, I love it. These cookies look so vibrant and colourful, not to mention how yummy the combination of chocolate mints and cookie sounds.
M&M Pudding Cookies (via Picky Palate): It wouldn’t be a recipe roundup without the inclusion of some M&M cookies, now would it? These ones look big, soft and buttery, which is just how I like love my cookies and are studded with chocolate chips and chocolate M&Ms for a burst of colour. The big kid in me is doing backflips.
Lemon Wedding Cookies (via Mother Thyme): These cookies look like soft little pillows of lemony goodness. They use lemon instant pudding mix and a sprinkling of fresh lemon zest to give them a zing, but they melt in your mouth when you bite into them. Doesn’t get much better than that.
