Until my discovery of canned chipotle chiles in Mexico last year, I had never eaten anything with chipotle in it. Or on it. Or slathered on top of it.
Then a whizzed up a batch of chipotle sauce that I smothered on my chilaquiles and I was smitten. My only concern was whether I’d be able to find any of these wonderful little chiles once I moved back to Europe. I needn’t have worried, as there are several international stores here in Amsterdam and many of them sell traditional Mexican foods for the big US expat community.
In honour of purchasing my batch of chipotle chiles, I’ve been searching for some of the most delicious chipotle recipes out there. Excuse me while I mop up my drool.
Honey Chipotle Chicken Crispers (via Creme de la Crumb): You’re never too old for chicken fingers. But a honey chipotle sticky sauce definitely sounds like a grown up delight to me.
California Club with Chipotle Mayo (via From Away): If there’s one sandwich that’s guaranteed to get my attention on any menu, it’s a Club Sandwich. But I very rarely make one at home. I have a feeling that that’s about to change.
Chipotle Lime Guacamole (via Cooking ala Mel): I have a guacamole obsession and I make no attempt to hide it. Plus, I love spicy food or anything with a bit of a kick, so this dip is right up my street.
Chipotle Beer Shrimp Quesadillas with Spicy Guacamole (via How Sweet Eats): Ahhh cheesy quesadillas, how I love you so. Throw in some boozy chipotle shrimp and I’m pretty sure I’d marry you on the spot.
Tequila Lime Chicken Sandwiches with Chipotle Mayo (via Host The Toast): After club sandwiches, chicken sandwiches are always my next go to. They basically had me at the bacon and guac in this recipe, but go on then – let’s drizzle on some chipotle mayo for good luck. Yum.
Black Bean, Sweet Potato and Quinoa Chilli with Smoked Chipotle (via Ambitious Kitchen): Sweet potato in any form is practically a daily staple in my house all year round. It’s summer outside, you say? Pah! Hand me the chilli and chipotle creme.
Healthy Chipotle Sweet Corn Fettuccine (via Pinch of Yum): If Scott didn’t hate corn (I know, I know, don’t even get me started), I would be making this dish right now. Seriously, right this instant. But I’ll have to wait until he’s out. Or force feed it to him. Same same.
Chipotle Pork Enchiladas (via White On Rice Couple): Ahh cheesy quesadillas, did I mention that I love you? I did? Oh ok, well now that you’re stuffed with chipotle pork, I love you even more.
Cheesy Chipotle Chicken and Rice (via Yammie’s Noshery): This dish is gluten free and a whole pan-full of delicious. It’s creamy, cheesy and Tex Mex, so basically everything I want from a meal.
Chipotle Shrimp Salad Bowls (via Tasty Kitchen): Lettuce salads are so last season. All the cool kids are using rice and quinoa these days. Maybe I’m not a cool kid, cos I just used the phrase “cool kids”, but I know a damn tasty salad when I see one.
Baked Chipotle Sweet Potato and Zucchini Fritters (via Averie Cooks): These fritters are baked, not fried and look so damn pretty that I’d probably just shove them in my mouth and forget to serve them with anything. Oops.
Maple Chipotle Pulled Pork and Beans (via Rock Recipes): I’m salivating just imagining the smells that must waft out of the pan while this is cooking. Sweet and spicy pulled pork and beans – it’s a dinner in a pot.
Chipotle Mahi Mahi Burrito Bowls (via Half Baked Harvest): Just saying the name Mahi Mahi makes me feel like I’m somewhere exotic. But, I’m not. I’m just standing in my kitchen shoving these burrito bowls into my face as fast as I can.
Vegan Nachos (via A House In The Hills): Vegan nachos, you guys. I didn’t even know this was a thing. Let alone such a delicious thing. Topped with chioptle tofu – these are firmly on my “must try” list.
Pumpkin Chipotle Cream Pasta Sauce (via Boulder Locavore): “But it’s not autumn!” I hear you cry. Who cares? Not me, that’s for sure. A healthier version of cream sauce pasta is a year-round winner in my book.
Mexican Hot Dogs with Chipotle Cream (via Damn Delicious): Is it wrong that I’m considering just doing away with the hot dog in this recipe and eating the salsa and chipotle cream on its own in a bun? Yes? Ok, I apologise.
Egg and Avocado BLT with Chipotle Mayo (via Sweet Remedy): Drippy eggs. They get me every time. But drippy eggs + chipotle mayo = one hell of a Sunday morning brunch. Am I right?
Chipotle Sweet Potato Biscuits (via Scarletta Bakes): Here I go with the sweet potato again, but I just can’t help it. Plus, I’m having biscuit withdrawal symptoms since leaving the States, so I need to eat these to make myself feel better. Stop judging.
Chipotle Crab Cakes with Mango Avocado Salsa (via The Scrumptious Pumpkin): Crab. And avocado. And mango. And chipotle? Erm, excuse while I die and go to heaven. Will you just pass me a crab cake before I go, though?
Chipotle Chicken Tortilla Soup (via Eclectic Recipes): Taking tortilla soup to a whole new, smoky level, this soup screams Mexico in a bowl.

Man, what a great list! I don’t know where to begin. We’ve just discovered chipotle chiles too and I’ve been throwing them in venison chili and mixing up alot of chipotle mayo and chipotle ranch dressing. I can’t wait to try some of these recipes. Thanks, Julia!
