Gooey Butter Cake is a St. Louis institution. I have only ever eaten it once before, and it was a shop-bought version, yet it was so good that I had to try another slice this time around in the city.
This deliciously gooey sweet treat has a denser cake base and a softer, buttery topping which is then sprinkled with icing sugar. It’s very rich, meaning it would be hard for someone like me to take down too much of it (which is really saying something), but a slice like this really hits the spot.
I want to make my own homemade version of the cake while I’m in town, so watch this space for another post! Edit: here’s my gooey butter cake recipe (and video).
